Secret Sauce 14 - DJ Eft

I wanted to make a mix that embodies what I listen to both while cooking and during eating dinner which can be starkly contrasted. When cooking I like to listen to downtempo or techno but when eating I like to play classic songs. There's some moments of bliss and chaos and I embrace it all just like when in the heat of the kitchen.

I like to drink wine while I cook sometimes so there are some sipper style tracks present in this mix as well as biters and cookers. Shouts to my boo Emma for always cooking with me!

XXXTRA CRISPY SKIN SALMON

Ingredients

Acquire a nice hunk of WILD CAUGHT salmon skin on.

  • Salmon
  • Salt
  • Pepper
  • Olive Oil

Instructions

  1. Pull out bones with tweezers and pat fish dry with paper towels
  2. Place fish *skin side up* in the refrigerator for 30 minutes up to 3 hours to remove moisture / ensure crispy skin
  3. Rub fish with a small amount of olive oil to help seasoning stick and season liberally with salt and pepper. This layer also helps from the skin crust.
  4. Heat 3-5 tablespoons of oil in a cast iron skillet on medium heat (amount of oil will differ depending on size of fish and skillet but the idea is to have the skin submerged in oil, gas stoves for the win)
  5. Place fish in skillet skin side DOWN first ensuring all parts of the skin are touching the pan and sear for 7.5 minutes. (A metal fish spatula is your friend here)
  6. Turn off heat and flip fish over to meat side for 1 minute. Even less time for thinner fish. Remove and serve!
  7. I like to eat the fish with short grain rice and furikake as well as greens like broccoli or asparagus. Pairs well with Tedorigawa Yamahai Sake
