Secret Sauce 03 - Chris Moore

The inspiration behind the mix came to me when I was making risotto at home last month. The process of making risotto is very soothing and rhythmic, with the constant stirring that takes place. There's also a certain 'looseness' to it that I find very appealing - in terms of just having to follow your instinct about how much liquid to add and when to do so. I thought back to the first time I made risotto, which was with Joel Pryde at a certain cabin in Gig Harbor when we first went there for Cody and Tara Morrison's bachelor party. We had been partying all weekend, but on that Sunday afternoon Joel made a big batch of risotto, and it was a communal effort, with a few of us taking turns stirring the rice while we talked, drank wine, and listened to music. It was such a memorable cap to a perfect weekend spent with my community, and to me encapsulates the overlap between dance music and sharing food that some of us find inspiration in. So I wanted my mix to reflect the mood of that Sunday afternoon making risotto with friends : hazy, sensual, and rhythmic. I hope people will find comfort listening to this music while making food (and perhaps sharing some wine) with friends.
Joel Pryde's Risotto
The main thing I remember him telling me when we first made it is that you just need to make sure it has a "shit ton of wine" :
Ingredients
- 2 cups arborio rice
- 1 white or yellow onion, finely diced
- 1 tbsp butter
- 2 tbsp olive oil
- 1 tsp saffron
- 100g finely shredded Parmesan
- 1/2 bottle white wine
- 2 pints chicken stock
Steps
- Heat large wid pan over medium-low heat.
- Add oil and butter, let melt
- Add onion with a few pinches of salt, cook for 3-5 minutes until soft and translucent.
- Add arborio rice, toast for another 3 minutes.
- Scrape pan and add some chicken stock and white wine until it looks like the rice is swimming in a shallow pool.
- Continue to add chicken stock and white wine (in 5/1 ratio or so) while stirring for 20-30 minutes. The rice should continue to absorb the stock/wine mixture, but should be kept swimming by adding more liquid.
- When rice has reached an al dente state, and liquid is absorbed, turn off heat.
- Add Parmesan and saffron while stirring.
- Salt and pepper to taste.
