Secret Sauce #01 - Off99

OFF99’s Cornbread & Ribs

Recommended order:

  1. Bake cornbread.
  2. Reduce oven heat and bake ribs.
  3. Begin greens while ribs are in the oven.
  4. If necessary, reheat cornbread in the oven while ribs are resting.
  5. Listen to great music.

Cornbread

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • ½ cup butter, melted
  • ¼ cup brown sugar
  • ¼ cup honey
  • 1 egg, room temperature
  • 1 cup buttermilk, room temperature

Method

  1. Preheat oven to 400, butter and flour a square baking pan/deep pie tin
  2. Whisk together cornmeal, flour, baking soda and powder, and salt.
  3. In a separate bowl, whisk together butter, sugar and honey
  4. Whisk in egg, then buttermilk
  5. Pour wet ingredients into dry ingredients and mix until just combined
  6. Bake for 20 minutes or until a utensil inserted in the middle comes out dry
  7. Remove and allow to cool

Ribs

Ingredients

  • 2 racks pork ribs (or as many as you’d like, just increase seasoning amounts)
  • ¼ cup brown sugar
  • ¼ cup granulated garlic
  • ¼ cup kosher salt
  • ¼ cup black pepper
  • ¼ cup smoked paprika
  • Optional: other seasonings as you like/to taste. Cumin, parsley, oregano, cayenne, chili pepper flakes, onion powder, dry mustard, etc.
  • Optional: barbecue sauce of your choosing. Dry ribs are bomb though.

Method

  1. Heat oven to 350.
  2. Mix dry ingredients together to form a rub.
  3. Generously cover ribs with rub, on all sides--pat to make sure it sticks.
  4. Place ribs bone-side down on sheet pan, into oven for an hour/until bones begin to poke out from the meat.
  5. Remove ribs from oven, wrap each rack individually with foil.
  6. Return to oven for 30 minutes.
  7. Remove, rest for 15-20 minutes in foil.
  8. Remove foil, sprinkle on more rub/mop with your favorite barbecue sauce.
  9. Optional: return to oven for a quick broil to reduce barbecue sauce/crisp up seasonings.
    Clean them bones.

Collard Greens

Ingredients

  • 2 bunches collard greens cut into inch segments/one large bag pre-cut collard greens, or any hearty greens of your choice.
  • 6 slices bacon, sliced in 1-inch pieces
  • 4 cloves garlic, minced
  • 1 large yellow onion, diced
  • 1 quart chicken broth
  • Salt and pepper to taste
  • Dash red pepper flakes, or to taste

Method

  1. Heat a deep pot over medium heat.
  2. Add bacon and fry until crispy/fat is rendered
  3. Remove bacon, keep fat in pan (remove as much as you want, but keep at least two tablespoons)
  4. Cook onion in bacon fat until translucent and tender
  5. Add garlic, cook until nicely fragrant (45 seconds-minute and a half)
  6. Add greens, mix well and cook until wilted
  7. Add chicken broth, salt, pepper, and chili flakes (if using)
  8. Reduce heat to low and simmer uncovered until stems of green segments are tender
  9. Taste and adjust seasoning
